40 Days of Food Initiative

During Lent, it is traditional for Catholics to give something up: candy, coffee, TV time. This year, Carroll's Health Sciences students decided to add something instead.  Students in the Introduction to Health Sciences course participated in the annual “Forty Days of Food” project, collecting one food item per day through Lent to support Helena Food Share.

The initiative began when students were learning about poverty, health, and limited access to food.   

“Food insecurity is real and some of our neighbors experience it everyday," said the course instructor Kelly Parsley. "When Carroll students learned this, they knew just what to do."

Students began collecting items that kids might like such as granola bars, raisins, boxed mac and cheese, and applesauce, but they also collected rice, beans and canned vegetables. This week, they delivered 824 pounds of food to Helena Food Share’s Lewis Street pantry.

"Never underestimate Carroll students," Professor Parsley said. "They have every intention to change the world, and they are actively doing it!"
