Activity #1: Transportation and Preservation. Do some research to see if the Romans transported food from city to city. Several towns were renowed for their condiment factories, including Pompeii. Liquamen, one the the earliest condiments, was a seasoned sauce of puree consistency, made from vinegar, oil, pepper, and a paste of dried anchovies. How was liquamen preserved? How effective was this preservation process? What it transported around the empire?  How did they do this?

Activity #2: Research the preservation process used by the Romans, and preserve some liquamen of your own for at least a week. Check it for freshness. Prepare a report that shows your results before and after.
